A Farewell to Easter

One last look at the Easter goodies until next year. I asked mom why we only made some of these delicious treats during Easter…. and she explained that they couldn’t afford to do it all the time when she was growing up in Calabria and they also took advantage of certain ingredients such as pork meat/sopressata,which they made in the winter months. Made sense then….. but maybe I’ll make it again soon:) Buona Pasquetta!


Ricotta Pie…. SOOOO Good!


Pastiera…. YUM! (both compliments of the family bakers:)


And last but certainly not least….. one of my favorites:Pizza Chena or Pizza Ripiena,Pizza Rustica or as we call it in our dialect Pitta Chena.

    We were lucky enough to get invited to an Italian get together on Easter Sunday and I got to try Pastiera in real life. It tasted just as good as yours looks,bliss.

    Cherrye,that’s my favorite! Pizza Chena (Chena is dialect for Ripiena or Piena) loaded with all sorts of goodies. meat,eggs,potatoes…
