Hi! I just found some of these growing on either a cedar or a Douglas fir stump. Do you know if they are still edible?

Hi Lucille... glad you found me. Yes, I do recall leaving a comment on your blog a while back. We were out on the Cape a few weeks ago and as always.. had our eyes open but no luck. Question for you... do they freeze well? We've thought about it but never have. It would be great to have some in mid winter! We're heading out today for a hen round up. We're hoping to find some good ones as it's starting to get colder than usual and not sure how much longer they'll be around. Happy foraging!

Hi Joe!

Found your site while looking for recipes using Chicken-of-the-woods mushrooms. Yours sounds delicious. I have tons of them in the freezer and just found a huge one yesterday- nice and fresh.

Didn't you stop by my blog Indian blog last year after reading my wild mushroom post? Seems we both learned to forage wild fungi from our Italian grandfathers.

This year has been a good one for Hen-of-the-woods here on the Cape.

I'm passing along the link to your site to my Uncle. He'll love it!

Going to clean that huge 'Chicken' now :-)

Hi Mark, we jar tomato sauce (fresh tomatoes) ever year... so we use that. It's basically puree tomatoes and then season it. Hope that helps, buon appetito!

Just found some Nassa in NL. Your recipe sounds great. But what exactly is your tomato sauce? Is it ketchup, puree or pasta sauce? Kind regards, MARK
