The zucchini are starting to appear in the garden and one of our family favorites and easy-to-make recipes for this wonderful vegetable is something we call “cucuzzieli e uova”…which is also fun to say! (try saying it 3 times fast)
Cucuzzi are actually another type of squash but once the name sticks, there’s no changing it! I used to love when my mother would make this when we were growing up. I could eat a whole pan full of cucuzzieli e uova with a loaf of my mother’s homemade bread. Che buono!
Here’s how to make it:
Fry some extra virgin olive oil and garlic on medium heat for a few minutes and then add 1-2 zucchini thinly sliced. Cover and let the zucchini soften for about 10 minutes stirring often. Once your zucchini are soft, add a few eggs (2-4 depending on the amount of zucchini) and stir until the eggs are fully cooked. Add salt and pepper. Does it get any easier? Serve with fresh bread as a meal or side dish…goes great with a fresh tomato salad. Enjoy and buon appetito!

I was just wondering what to do with the zucchini that I’ve never done before and now thanks to you –I know!
Ooooo, not a good thing to read when I’m starving and getting ready to make dinner. Sounds wonderful. Hopefully my zucchini will get moving soon and I can try this!
Che bella,Joe! This is next on the “what-to-do-with-zucchini list. Simple and good!
Another great way to enjoy our Zucchini!
Looks great
One of my fall-back lunches is a frittata that looks similar to your dish.
Yum! My Mom (&Dad,too) used to make this. I still do. We put a little grated Parmiggiano or Pecorino Romano in with the egg –adds a little zing.
