I can fondly remember sitting with my mother and snapping the ends off green beans fresh from the garden when I was a kid, so yesterday when I was visiting my parent’s I picked the first green beans of the season and took them home, sat in the backyard and snapped away.
One of my favorite ways to prepare these beans, which are known as Romano Beans or Italian flat beans (among other names) is to make an Italian Green Bean Salad. It’s very simple really. All you need to do after you snap off the ends and wash them, is to boil them for about 10-15 minutes until they start to soften. Then add a little extra virgin olive oil, red wine vinegar, salt, pepper and a pinch of oregano. A light and delicious salad that goes great with any dish (white wine is a dish right?!) So go find yourself some Italian Green Beans and make a salad! enjoy and buon appetito!

OR….cook with potatoes, leave out the vinegar, add plenty of garlic and yum! And yes, white wine is a dish, absolutely!
It’s so versatile – its fresh – and there’s nothing better. I’m ready to snap some beans!
I love these Joe! Mine too are just about ready to harvest.. can’t wait!
I could eat a bucket of these beans this way, Joe. My beans are just starting to flower in the garden. Can’t wait to make this!
First of all, yes, white wine (or red) is a “dish”. Secondly, the salad looks great. Now if you have any good recipes for fava beans, send them my way!
I grew up on loads of these beans. I swear they were on the table nightly but now as an adult I appreciate them so much more!
Glad to hear white wine is a dish! Imani, yes… with some potatoes, they are excellent!
Snap away Claudia!
Jady, they must be ready by now… they grow so quickly.
I hope you’re are ready soon Barbara!
Sandi, my father planted some Fava beans this year… I’ll see if I can round up a recipe for you.
Bridgett, I’m with you! It seemed like they were on the table every day! and I agree, I appreciate them much more now too.
OK…so don’t these look like your beans…..
