Amen! And,if you don’t mix the sauce in right away,the spaghetti all sticks together in one big lump. I have never seen anyone here rinse their spaghetti after cooking. It goes straight from the pot into the bowl that has a small amount of sauce on the bottom. Then the rest of the sauce is ladled over it and it all gets mixed in.

Might I also add,don’t add oil to the pasta water…it causes the sauce to slide off the pasta.

Joe,this reminded me that my grandfather used to complain if we was served ready-mixed pasta and sauce. Now,I don’t come from an Italian family and my grandad used to chop up his spaghetti with a knife because he was a meat and two-vegetables kind of guy who liked things to be distinct on his plate. Nowadays,I wonder who still serves/eats pasta this way,but then I do notice restaurants with exactly that picture above advertising their food. Perhaps it’s just as well they do show you their awful presentation ahead of time,or maybe one should never trust restaurants with pictures of their food?
I mentioned this tonight to a friend,and he said he just uses tomato paste. Cringe.
This has been a pet peeve of mine for a while,because it is impossible to truly integrate the sauce into the pasta evenly without making a mess (especially on a small plate)!
LOL! I never serve it any other way Joe! Plus,never place meatballs with the macaroni —serve them separately!
